RESUMEN
En el mercado altamente competitivo de la cerveza artesanal, la búsqueda de nuevos sabores impulsa la
exploración de materias primas poco convencionales. Este estudio se centró en la utilización de maíz morado
(Zea mays) y quinua (Chenopodium quinoa) (40:60 y 60:40 % respectivamente) tipo maltas para obtener una
cerveza artesanal, tostadas a diferentes tiempos (105, 115 y 125 minutos) y temperaturas (100, 110 y 120 y
°C). Se realizaron análisis fisicoquímicos (°Brix, pH, densidad, grados alcohólicos y acidez total) y
sensoriales con la participación de 30 panelistas para evaluar color, olor, sabor y espuma. Los resultados de
los análisis fisicoquímicos °Brix, pH, densidad, grados alcohólicos y acidez total fueron en promedio 7.4
°Brix, 4.6, 1.011 g/cm3, 4.6 % y 0.3 %, respectivamente. Los evaluados mediante el test de Friedman, no
mostraron diferencias significativas entre sus atributos (color, olor, sabor y espuma). No obstante, en
términos descriptivos se puede observar que la cerveza artesanal P2T2t3 destaca en los atributos de color,
olor y espuma, obteniendo calificaciones de 3.5, 2.9 y 3.4 puntos respectivamente, mientras que, para el
atributo de sabor, la cerveza P2T1t2 destaca con 3.0 puntos.

ABSTRACT
In the highly competitive craft beer market, the search for new flavors drives the exploration of
unconventional raw materials. This study focused on the use of purple corn ( Zea mays) and quinoa
(Chenopodium quinoa) (40:60 and 60:40 % respectively) type malts to obtain a craft beer, roasted at
different times (105, 115 and 125 minutes) and temperatures (100, 110 and 120 y °C). Physicochemical
(°Brix, pH, density, alcoholic strength and total acidity) and sensory analyses were performed with the
participation of 30 panelists to evaluate color, odor, flavor and foam. The results of the physicochemical
analyses °Brix, pH, density, alcoholic strength and total acidity were on average 7.4 °Brix, 4.6, 1.011 g/cm3,
4.6 % and 0.3 %, respectively. Those evaluated by Friedman's test did not show significant differences
between their attributes (color, odor, flavor and foam). However, in descriptive terms, it can be observed that
the P2T2t3 craft beer stands out in the attributes of color, odor and foam, obtaining scores of 3.5, 2.9 and 3.4
points, respectively, while for the attribute of flavor, the P2T1t2 beer stands out with 3.0 points.
